Idli Ingredients:


1 cup rice
1/2 cup split black gram (Urad dal)
1/2 tsp fenugreek seeds
Water (for soaking)
Salt to taste
Oil (for greasing the molds)

Sambhar Ingredients:

1/2 cup split pigeon peas (Arhar dal)
1 medium-sized tomato (chopped)
1 small onion (chopped)
2-3 green chilies (slit)
1/2 cup mixed vegetables (carrot, beans, potatoes, etc., chopped)
1/4 cup tamarind pulp
1/2 tsp turmeric powder
1 tsp Sambhar powder (store-bought or homemade)
Salt to taste
1 tbsp oil
1/2 tsp mustard seeds
1/4 tsp asafoetida
A few curry leaves
Coriander leaves for garnish

Idli Preparation:

1 .Wash the rice and black gram thoroughly and soak them with fenugreek seeds in water for 4-5 hours.
After soaking, grind the rice and black gram to a smooth batter in a blender. The batter should be slightly thick. Add salt and mix well.

2 .Heat water in a steamer. Grease the Idli molds with oil and pour the batter into each mold, filling them three-fourths full.

3 . Steam the Idlis in the steamer for about 10-12 minutes or until a toothpick inserted comes out clean. Allow them to cool for a few moments before removing from the molds.

Sambhar Preparation:

1 .Cook the split pigeon peas in water until they turn soft and mushy. Gently mash them and keep them aside.

2 . In a pan, heat oil and toss in the mustard seeds. As soon as the mustard seeds start crackling, promptly add asafoetida and curry leaves.

3. Sauté chopped onions until they become translucent. Then, add chopped tomatoes and green chilies. Cook until the tomatoes become mushy.

Next, incorporate the mixed vegetables and cook them for a few minutes.

Add tamarind pulp, turmeric powder, Sambhar powder, and salt. Mix everything well.

Finally, add the cooked split pigeon peas to the mixture and let the Sambhar simmer on low heat for 10-12 minutes or until it reaches the desired consistency.
Serving:
